This recipe comes from an annual occurrence at the ski hill in Ellicottville, NY where a large group of people gather in someone’s house or chalet and enjoy Arctic Fisheries’ seafood products in a festive atmosphere.
Preparation:
Empty taco seasoning into a large plate. Coat fish with taco seasoning so that all sides are covered with seasoning. Set aside.
Lay out a large enough sheet of aluminum foil so that you can make a foil packet. Place a handful of sliced onions on the foil. Follow that with a handful of black beans and a few strips of peppers.
On top of this, add the seasoned fish strips, followed by more black beans, a variety of peppers and perhaps some onions (to taste). Lastly, place a few slices of lime on top.
Make a foil packet by bringing the sides of the foil up and over the fish and fold together, take the open sides and fold them up to close the packet. An air-tight foil packet will allow the moisture from the fish and vegetable to steam the entire packet.
In an oven, cook at 400º for 12-15 minutes or on a hot grill for 8-10 minutes. Test with a fork to see that the fish is done. Remove the limes, and serve.
For serving, prepare a soft tortilla with the desired sauces, vegetables and cheeses, add the fish, roll it up and enjoy.
