Simple Baked Fish

For the Fish: Four Manaberg Packed at Sea Cod/Haddock/Pollock Fillets approximately 8 ounces each.

Ingredients:

Spray a baking dish with your favorite cooking spray.  Place fish on baking dish and season with salt & pepper and juice.  Place 1/4 cup of dandelions and 1/4 cup of mozzarella on each fillet.  Bake in a 375º oven until desired doneness - approximately 10-12 minutes.  Serve immediately with sun-dried tomato, roasted garlic risotto and a glass of white wine.

For variety: Try adding your own spices and flavors.
